Instant Pot Tomato Soup: It’ll Make You Feel Good

Creamy tomato soup has been something I have always loved, but finding a way to make it easy and quick was a challenge. This recipe does just that, has a few simple ingredients that you place in an instant pot, and the rest is magic. For a great-tasting lunch or dinner, give this a try!

Instant Pot Tomato Soup

Great in the winter months as well as times when you aren't feeling your best. It will make you feel better. This is an easy and great tomato soup you can prepare easily in less than an hour and it is great.

Ingredients

  • 1 TBS Olive Oil
  • 2 TBS Butter
  • 1 Chopped Onion
  • 4 Cloves Garlic
  • 1/4 TSP Red Pepper Flakes
  • 45 Oz of Diced Tomatoes
  • 4 Cans of Chicken or Vegetable Broth
  • 1 TSP Salt
  • 1/2 TSP Pepper
  • 1 TSP Italian Seasoning
  • 1 TBS Fresh Basil or 1 TSP Dried Basil
  • 3/4 Cup Parmesan Cheese
  • 3/4 Cup Heavy Cream

Instructions

  1. Turn on your instant pots saute setting. Once it has preheated or says says "HOT" add the olive oil, and butter and saute the onions for about 5 to 7 minutes.
  2. Add the garlic and red pepper flakes and stir for 1 minute without stopping.
  3. Turn off the saute setting and add the diced tomatoes, broth, and spices including salt, pepper, Italian seasoning, and basil.
  4. Stir it up a bit and then set your pressure cooker to high and cook for 5 minutes after it reaches full pressure. Then allow it to self-release for 15 minutes before releasing pressure.
  5. Add your soup to a blender small portions at a time to puree it so that it is creamy and smooth. You can also use an immersible blender inside the instant pot - or skip this step for a chunky style of tomato soup. Your choice!
  6. Add the parmesan cheese and stir to allow it to melt.
  7. Add the heavy cream.
  8. Add salt and pepper to taste.
  9. Serve, and garnish if desired, and enjoy!
  10. Eat with croutons, saltine crackers, or grilled cheese.

Notes

I have made this recipe many times and changed it up frequently based on what I have on hand. If you have an extra bell pepper or a couple of celery sticks they can be added in the beginning during the onion sauteing process. Even some carrots.

As with every recipe, make it your own, but if you want a simple and good recipe, follow this one by the book and you won't be disappointed.

Great With A Grilled Cheese Sandwich

If you are looking to have something to go along with this tomato soup, a grilled cheese sandwich is a winner! It pairs fantastic with it and dipping it into the cheesiness of it is amazing.

Simply grab a couple of slices of bread and place butter on both sides of the bread. Place one of them into a skillet on medium heat.

On the side this is up add 1 or 2 slices of American cheese. If you want to really get fancy add one slice of cheese, a few jalapeno slices, then another slice of cheese over the peppers.

Place the other piece of bread on top of the cheese. The cheese will begin to melt between the slices.

Once the first piece of bread is brown, flip it over to cook the opposite side until brown.

Enjoy! You can make this grilled cheese while your instant pot is self-releasing the pressure and it will be ready close to the same time.

Great With Crackers

If I don’t have time to make a grilled cheese sandwich, this goes great with some regular saltine crackers.

Place your soup in a bowl and grab a saucer that your bowl fits on. Take a hand full of crackers and place them around the bowl on the saucer. Break a few pieces of crackers on and put them right on top of your soup.

This is a great addition to tomato soup and dipping the crackers in the soup and eating them is amazing. Give it a try, it is an easy addition to a great soup.
