Beer Cheese Pizza on the Big Green Egg

If you’ve never had beer cheese on pizza… you’re about to question everything you thought you knew about pizza night.

This cook was all about combining two of my favorite things: beer cheese dip and pizza—then taking it up a notch by firing it all up on the Big Green Egg. Smoky crust, cheesy goodness, crispy bacon, and sizzling sausage… you’re gonna want to try this one for yourself.

???? How to Make the Beer Cheese Sauce

We started by whipping up a homemade beer cheese sauce right on the stovetop.

Ingredients:

  • 2 tbsp butter
  • 2 tbsp flour
  • ½ cup heavy whipping cream (milk or half & half works too)
  • ¼ to ½ can Miller High Life
  • Seasoned salt
  • Pinch of habanero powder (or cayenne)
  • 1 cup shredded mozzarella
  • Colby Jack (as much as you want)

Steps:

  1. Melt butter, then whisk in flour to make a quick roux.
  2. Slowly pour in the cream, stirring constantly.
  3. Add beer and let it simmer while you stir.
  4. Season with salt and a little heat (if you like it spicy).
  5. Stir in mozzarella and Colby Jack until thick and melty.
  6. Try not to eat it all with chips before it hits the pizza.

Y’all… this stuff doubles as an incredible dip too. Just ask my kid who started sneaking chips in before we even got the pizza built.


???? Assembling the Pizza

We used pre-made pizza crusts to make this cook quick and easy. Here’s what we added:

  • That dreamy beer cheese as the base sauce
  • Caramelized onions
  • Crumbled sausage
  • Crispy bacon
  • Pepperoni
  • A little more cheese (because of course)

Dolores even made her own version with extra red pepper flakes and the onions right on top for a punch of flavor.


???? Cooked on the Big Green Egg

We fired up the Big Green Egg and let these pizzas cook for about 15 minutes until the crust was golden, the toppings were bubbly, and the smell was out of this world.

The result? Two pizzas, both different but equally loaded with smoky, cheesy flavor.


???? Taste Test

  • My version: Pepperoni-heavy, bold with sausage and extra cheese.
  • Dolores’ version: Extra beer cheese, caramelized onions on top, red pepper flake heat.

Both were killer. That beer cheese sauce was the real MVP — we’re already planning to use it on burgers and steak next time.
