Welcome back to Okie Smokin (formerly JB Cooks), where we believe good food doesn’t have to be complicated—and sometimes, it just takes a good ol’ cast-iron skillet.
In this video, I did something brand new on the channel: I baked a pizza—a supreme-style, loaded pizza—right in my cast-iron skillet. Whether you’re a homemade dough kind of person or a store-bought crust fan, this pizza is guaranteed to impress.
Let’s break down the full process so you can make your own at home.
⸻
???? Homemade Pizza Dough (From Scratch)
Feel free to grab store-bought dough, but if you want that homemade flavor, here’s how to make it from scratch:
Ingredients:
• 1 cup all-purpose flour (initial)
• 2 ¼ tsp instant yeast (or 1 packet)
• 1 ½ tsp sugar
• ¾ tsp salt
• ¼ tsp garlic powder
• ¼ tsp dried basil
• ¾ cup warm water
• 2 tbsp olive oil
• Additional flour for kneading (about 1 more cup)
Directions:
1. Mix dry ingredients: Combine the flour, yeast, sugar, salt, garlic powder, and basil in a bowl.
2. Add liquids: Stir in the warm water and olive oil until combined.
3. Add more flour: Slowly add more flour while stirring until the dough becomes elastic and pulls away from the bowl.
4. Form dough: Roll into a sticky dough ball. Flour the outside to make it easier to handle.
5. Let it rise: Place in a pre-oiled bowl, cover with a towel, and let it rise for 30 minutes until doubled in size.
6. Knead: After rising, flour a surface and knead the dough 4–5 times.

???? Time to Cook: Let’s Build the Pizza
This recipe makes two pizzas in a 9-inch cast-iron skillet.
Preheat & Prep:
• Start by preheating your cast-iron skillet for 15–20 minutes.
• Cook up some sausage or your topping of choice in the same skillet.
• Once cooked, remove the sausage and leave a thin layer of oil in the skillet.
Shape the Dough:
• Divide dough in half and roll one portion out.
• Carefully lay the dough into the hot skillet, folding edges if needed.
• Let the bottom of the crust cook slightly on the stovetop for 3–4 minutes over medium heat.
⸻
???? Load It Up: Supreme Pizza Toppings
Here’s what I used for my “JB Cooks Supreme”:
• Olive oil (brushed on crust)
• Marinara or pizza sauce
• Mozzarella cheese
• Pepperoni
• Cooked sausage
• Mushrooms
• Black olives
• Sliced onion
• Sliced garlic
• (Optional: ham, Canadian bacon, pineapple—whatever you love!)
Top everything off with a final sprinkle of cheese, and you’re good to go!
⸻
???? Bake It
• Preheat your oven to 425°F (218°C).
• Bake the pizza in the skillet for 10–14 minutes or until golden brown and bubbly.
• Remove carefully and let cool for a few minutes.
⸻
???? The Taste Test
This pizza came out incredible—crispy on the bottom, soft in the center, and loaded with flavor. It’s not meant to look perfect—it’s meant to taste homemade. And believe me, it does.
Plus, that second pizza? Even better. I loaded it down with extra garlic and wow… it might be my favorite yet.
