Pork Chops and Asparagus Cooked On The Pit Barrel Cooker

Smoked pork chops are one of my favorite items I cook in the Pit Barrel Cooker. They are quick and easy to make and taste phenomenal.

Required Items

You will need a hook for each of the pork chops you plan on cooking.

If you are making asparagus, you will either need a hanging basket that you can purchase from PBC or the hinged grate.

Place the asparagus in the basket to hang or if using the hinged grate you can hang the pork chops on one side while cooking the asparagus wrapped in aluminum foil on the other side sitting on top of the grate.

Juicy and delicious pork chops over charcoal add great flavor. Cooking them slowly helps keeps the juices in.

Ingredients

  • Olive Oil
  • Salt, Pepper & Garlic (SPG Mix)
  • Thick Pork Chop
  • Asparagus

Instructions

  1. Add charcoal to your PBC basket level to the top.
  2. Take about 40 briquets out of the charcoal basket and add them to a chimney starter.
  3. Light the charcoal in the chimney starter and let it burn for about 12 minutes.
  4. Add the charcoal basket to the bottom of the PBC, then carefully pour the lit briquets over the charcoal basket.
  5. Verify your bottom vent is at the proper ventilation for your cooking location.
  6. Place the lid on the PBC while preparing your pork chops.
  7. Rub olive oil all over the pork chops.
  8. Liberally sprinkle SPG seasoning all over the chops.
  9. Place a hook through the pork chop.
  10. Hang your pork chop in your Pit Barrel Cooker.
  11. While your pork chops are cooking, wash your asparagus and snap the hard ends off.
  12. Sprinkle olive oil over the washed asparagus.
  13. Season with SPG.
  14. Place the seasoned asparagus into a hanging PBC basket.
  15. Hang the asparagus into the PBC and let it cook alongside your pork chops for 30 - 45 minutes.
  16. Cook the pork chops until the internal temperature reads 145 degrees.
  17. Remove the chops and asparagus and enjoy!

Elevation

You need to set your bottom vent to the proper elevation for your location. First, determine how far above sea level you are at your location. A simple Google search will help you determine this.

Then sit your vent according to shown below:

  • 0-2000 feet the vent needs to be about 1/4 of the way open.
  • 2000-5000 feet the vent needs to be about 1/2 of the way open.
  • 5000-8000 feet the vent needs to be about 3/4 of the way open.
  • Anything above 8000 feet leaves it all the way open.

By setting your vent to the settings above, you will ensure that your PBC is cooking at the proper temperature throughout the entire cooking process without worrying about it getting too hot, or not hot enough.
